Cold Cuts

Pork products have historically played a leading role in the territory of Lodi, and the excellent quality of these products has been unanimously recognized but not always adequately enhanced. Salami, cotechino, and ham steak (the famous giambon ludesan) represent the result of the processing stages carried out in the territory and starting from the local breeding activities. Among the various goals of the local production, that has been lately growing, there is also the enhancement, with a wise processing, of a considerable part of the quality raw materials (in the area of Lodi, about 400,000 pigs are bred) that in the recent past and mostly still today, have been ensuring the success of foreign processing companies.
