Garfagnana Ottofile Corn Bread

Features: corn bread. Round shape (semi-sphere) with a diameter of about 15 - 18cm. Each loaf weighs 400 -500 grams.
Crust with a golden yellow color, slightly bronzed in the upper part, soft and with no surface cuts. Inside, it is characterized by an intense yellow color.

Ingredients: Ottofile corn flour, superfine flour, water, salt, sourdough starter, and yeast.

Ottofile corn is an ancient and endangered corn variety, which is still cultivated in Garfagnana. It is harvested and dried in the sun and, when it is dry, it gets stone milled.

Garfagnana Ottofile corn bread
is excellent if toasted and used as base to make crostini to eat with cold cuts and cheese. Among the cold cuts, we recommend Testa in Cassetta and among cheese Garfagnana Pecorino, both registered in the list of the "Traditional Agri-foodstuffs of Tuscany".

Ottofile corn bread is produced on some days of the week.
