Historical or traditional information: Honey production has very ancient origins and is very important as an environmental presida and for the entomophilous activities it leads to.

Production area: Municipalities of Fonteno, Solto Collina, Riva di Solto, Bossico, Sovere, Pianico, Lovere, Castro, Costa Volpino, and Rogno (BG)

Product features: Plain, hill, and mountain mixed flowers honey, dandelion honey, acacia honey, chestnut honey, lime tree honey, honeydew, rhododendron honey

Processing, conservation, and maturation methods: Bee-keeping in classical beehives, honey extraction in adequate sterilized premises, with adequate equipment

Specific material and tools used: Stainless steel honey extractors for the cold extraction of the product through centrifugal force and stainless steel containers with a variable capacity (1 q - 10 q) for the settling of the product before the packaging in glass jars with screw capsule.

Description of the processing, conservation, and maturation premises: Classical premises complying with the HACCP specifications.
