Upper Sebino Oil (Laghi Lombardi PDO)

Historical or traditional information: Olive growing is a traditional activity also along the shores of Sebino Lake in the area of Bergamo, where also the most inaccessible soils house wonderful terraces cultivated with olive trees.

Production area: Municipality of Riva di Solto, and the surroundings of Solto Collina, Pianico, Sovere, Castro, Lovere, Costa Volpino, and Rogno.

Product features: Extra-virgin olive oil with a straw yellow color, a delicate fruity taste, not very acid, but very delicate and digestible.

Processing, conservation, and maturation methods: Olive harvesting in October/December, traditional pressing in local oil mills, settling and filtration in adequate reservoirs.

Specific material and tools used: Manual or mechanic harvesting in special containers, pressing in classical oil mills.

Description of the processing, conservation, and maturation premises: Classical premises, that can be adequately washed.

Cooking use: For delicate flavoring or particular genuine diets.
