Parco Archeologico Storico Naturale delle Chiese Rupestri del Materano

It is an autochthonous olive cultivar growing only in a few small Municipalities of Basilicata (Ferrandina, Missanello, Salandra, and a few more). This olive cultivar does not grow outside this area and, if it does, it does not give the same results. The drupes can be processed with a very ancient and natural local method using boiling water and salt, and then the oven, giving them a slightly bitter and characteristic taste.
