Smoked ricotta cheese is produced in malga and in some cheese factories of the mountain valleys of Friuli. Characterized by a compact shape, it has an unmistakable and intense taste, slightly smoked, and recalls all the tastes and aromas of the fine mountain milk. It is ideal if grated on the pasta or even better on pumpkin gnocchi. It is very tasty also alone, but it is great if combined with a good slice of polenta together if a fine glass of red wine.
