Sicilian Pecorino Cheese

The very ancient cheese production includes Sicilian Pecorino Cheese, widespread all over the Island and one of the most ancient kinds of cheese of the Sicilian tradition. It is a hard and raw cheese exclusively obtained from whole sheep's milk, fresh and coagulated with lamb rennet. Out of the various kinds of pecorino cheese produced, only Sicilian Pecorino Cheese matured for at least 4 months can boast the PDO label.
