Parco Naturale Regionale della Lessinia



A salami from Venetia par excellence, it is largely produced also in Lessinia. Soppressa is a product linked to poor cooking that, according to the local tradition, is eaten with bread and polenta.
It is obtained by coarsely mincing the best pork meat flavored with salt, pepper, garlic, and then packed into the bowels. It must mature in the cellar for several months.
