In the past, it was the cheapest product that could replace oil and butter. Only a few pigs are fit for the lard production, since only the lard found on the pork shoulder is used.
Once chosen the aromas, that must be fresh, they are added to the lard. The product is then put in a stone tub for the long refining process.
