Ivy honey

A very special agricultural-food product: the ivy honey.

This climbing plant, often used for decorative purposes, is also present in some areas of the Park, especially in the Campaldo area, on the border of the San Rossore Estate. It blooms in autumn with little white flowers that release an intense fragrance.

The main difficulty in this honey's production lies in its high glucose level even reaching 70%, and with very low temperatures this honey may crystallize within the honey body, making it impossible to extract it.
