Beach honey

The beach honey is obtained through organic methods, only along the Park's sea coastline (Marina di Torre del Lago, Marina di Vecchiano and San Rossore). The beach honey has a light-amber color, it is transparent and very fluid; both smell and taste remind us of the essential oils of the Maquis' plants this honey is obtains from: Helichrysum stoechas, achillea maritima, Centaurea subciliata, solidago litoralis, Greater Knapweed and the most widespread types of Cistus, that colonize most of the coastal dunes. In particular the Helichrysum stoechas represents a fundamental "ingredient" of the beach honey because the microscopic drops of essential oils collected by the bees give the honey its particular aroma and organoleptic qualities.
