Salam d'la duja

PAT - Traditional Agri-Foodstuffs


Salam d'la duja is obtained from a mixture of minced first-rate and thin meats (shoulder, cuts of meat from the neck and from the leg) and bacon fat or ham. The treatment consists in salt, pepper, spices, and garlic crushed in the mortar and dipped into wine (Barbera).
