One of the main features characterizing the south-western section of the Park area is represented by olive groves going from the town of Assisi to Spello (both belonging as a whole or in part to the protected area) and to Spoleto.
The climatic conditions, the soil physical-chemical features and exposure, as well as the olive harvesting and processing methods give birth to an excellent extra-virgin olive oil that is appreciated not only at a local level, but also at a national and international level.
This precious product is characterized by a more or less intense green color; it has an intense fruity aroma of green olives, a taste with bitter and spicy strong sensations indicating its richness in polyphenols, which are very important substances for the human health and the conservation of the oil itself.
