Extra-virgin Olive Oil

On 1st January 2009 the Regulations no. 834/2007 of the Council of the European Community regarding the organic production and the labeling of organic products came into force.
Therefore, the holdings that are going to produce with organic methods and put the organic label to their products must respect the above-mentioned regulations and undergo continuous inspections by the competent bodies.

Like all the organic products, also organic oil must demonstrate that in the production of olives no chemical additives have been used. Moreover, they should be cultivated in fertile soils, where wind and water are plenty.
Most of the organic holdings obtain the oil through the olive cold pressing.
