Alberello Courgette of Sarzana

Features: Alberello di Sarzana courgette is a cultivar with tapered and light green fruits, similar to Genovese courgette for size and shape.

Production Area: Piana di Sarzana

Curiosities: It was imported in Europe from South America in the 16th century. Its flowers were sacred for the people of the Andes. Courgettes must be picked up when they are not yet ripe, with white and compact pulp. Rich in water, they have a strong diuretic power.

Preparation: Among Cucurbitaceae, the courgette can be considered a less exacting species from a thermal point of view, since the production can consist of female flowers that have not been fecundated yet and that are picked up within one or two days. They are sown at a distance of 1-1.2m between the rows and 0.5-1m along the rows.

Recipe: Fried courgettes [Succhin friti]
Ingredients: 1/2 kilo courgettes, salt, flour, egg whites, oil.
Preparation: Clean and cut the courgettes into thin slices lengthwise and salt them to take out the water. Dip them in flour and in the egg whites beaten until stiff. Fry in boiling oil.
