Extra-virgin Olive Oil - Sabina PDO

Sabina extra-virgin olive oil is obtained from the olive varieties, taken separately or mixed, of the olive groves of Carboncella, Leccino, Raja, Frantoio, Moraiolo, Olivastrone, Salviana, Olivago, and Rosciola for at least 75%. Moreover, other olive varieties can be used in a percentage not exceeding the 25%. The olive harvesting is carried out from the onset of ripening, usually not after the month of December. The oil is characterized by a golden yellow color with green shades for very young oils, fruity fragrance, and velvety, uniform, aromatic, sweet and sour taste. The total maximum acidity expressed in oleic acid, in weight, does not exceed 0.7 grams for 100 grams oil.
