Red Pizza

PAT - Traditional Agri-Foodstuffs


In the past, red pizza was prepared at home. The dressing was based on ripe tomatoes with garlic, celery, salted anchovies, and extra-virgin olive oil. Red pizza is flat and is prepared with leavened bread dough always dressed with tomato in pieces or tomato sauce. The dough is left rising at room temperature for about 1 hour and then rolled out with the wooden rolling pin. It is baked at 260 - 270°C.
