In the Park you will have the opportunity to taste the cuisine of three Regions - Abruzzi, Lazio, and Molise - having in common an agricultural and breeding tradition based on simple and genuine products. Therefore, in all the Park towns you will find restaurants offering a traditional cuisine and a homely welcome. The careful preparation of the dishes and the quality products offered by agriculture and breeding make even the most simple dishes something special... The traditional dishes include maccheroni "alla chitarra", prepared with the particular tool with metal strings resembling the musical instrument, soup with "orapi" (wild spinach) and beans, gnocchetti made with water, flour, and "orapi", and grilled meat. Moreover, they include the local products linked to the sheep breeding tradition and to transhumance, like pecorino, sheep's milk ricotta, cow's milk caciocavallo, but also a rare goat's milk cheese, the so-called "Marzolina".
