Slow Food Presidium

Bonito under oil is included in the list of traditional products and is prepared with fillets of bonito coming from the sea of the Tuscan Islands. However, the processing and marketing are held in Suvereto (LI) along the coast of Tuscany. It is a traditional product of the Tuscan Archipelago, and its main ingredient comes from the Park area. The Bonito of the Tuscan Archipelago is also considered by Slow Food a product to safeguard, and it has been included in the list of the Slow Food Presidia.
