Production features: The preparation of ndussa consists of the stages of selection, curing, washing, processing, and dressing of olives. After a careful selection, the olives are dipped into a mixture obtained with water, sifted ash, and powder quicklime.

How to use it: this sauce can be used as appetizer, to garnish cold dishes, or as side dish based on meat (roasted or grilled meat).
