Primiero is a tasty mature cheese produced with cow's raw milk. It has a straw-yellow color, with small and irregular holes, and consistency varying according to the maturation process. The perfume of mountain milk, the maturation method recalling the "washed rind" of French cheese, and the duration of the maturation process give it an intense and unmistakable aroma and taste. You can recognize notes of pasture, mountain aromatic herbs, ripe fruits, and toasted hazelnuts.
Primiero di malga is a particularly fine cheese produced during the summer with the milk coming from the cows grazing in the summer mountain pastures. It has different maturation stages: at least 2 months for fresh cheese, over 6 for mature cheese, until 14-16 months for the most precious cheese rounds sold in Primiero Cheese Factory. It is ideal with polenta or to prepare tasty bread rolls.

Primiero di malga has recently obtained two important recognitions:

  • first prize as best summer mountain pasture cheese at the Contest held in Trentino for the cheese produced with milk coming from summer mountain pastures (Cavalese, September 2001)
  • among the 10 best Italian raw milk cheese types (over a total of 130) at the 1st National Contest of Raw Milk Cheese "Il Formaggio d'autore: premio al miglior formaggio italiano" (Saint Vincent, November 2001)
