Pestato with Gaeta Olives is a dressing mixture based on olives, anchovies, capers, and extra-virgin olive oil. It has a brown-violaceous color. The raw material is represented by Gaeta olives (pickled, produced according to the Itrana traditional method), salted anchovies of Gaeta Gulf preserved in terracotta pots, capers, and Itrana extra-virgin olive oil.
