A different salami, combined with a word that makes it special, matchless: "country-style". The main ingredient is coarse-grained pork meat seasoned with salt, pepper, and garlic. The mixture is then put into pork bowels and hand-tied. Afterwards, the essential seasoning process, which can last from 3 to 6 months, according to the size: the wet air of the Po Plain contributes to the formation of white or dove-color mould, necessary to guarantee the quality of the final result. There are different versions of this salami.
