Red celery of Orbassano

Celery (Apium graveolens) is a vegetable of the Umbelliferae family, like parsley and fennel. Red celery is grown in Orbassano (Turin) and the surrounding municipalities.

History: It is a subspecies of the violet celery of Tours, that Duchess Anne-Marie d'Orléans, wife of Vittorio Amedeo II di Savoia, took to Piedmont at the end of the XVII century. The Duchess was especially fond of this vegetable, and brought celery plants and seeds from her native Orléans. In Orbassano, this type of celery found suitable climate and habitat, developed its own characteristics and evolved into a variety of its own.

 

Recipes: its characteristic almond taste makes this type of celery very versatile. "Bagnet" is one of the traditional recipes made using this vegetable.
