The dairy production plays an important role in Veio Park and includes products obtained from cow, sheep, and goat's milk. Cheese deriving from raw milk processing, pulled-curd and hard cheese, matured from 30 days to 6 months; in some cases, the maturing process lasts even 8 years in a tufaceous cave. The rounds go from 0.2 to 3 kg. It has a characteristic egg shape with head, a straw yellow color, and the taste is from sweet to intense and spicy in the mature rounds and/or produced with curd in the texture.
