Cow's Milk Caciotta

The dairy production plays an important role in Veio Park and includes products obtained from cow, sheep, and goat's milk. Soft cheese or hard cheese if it is mature (from 30 days to 6 months). It has a cylindrical shape and a weight varying from 1.5 to 4 kg; white or straw yellow color, almost brown if matured for 6 months. Green cheese (two days) has a sweet taste, while it is slightly salty and spicy if matured for 6 months.
