Mixed Sheep and Cow's Milk Caciotta

The dairy production plays an important role in Veio Park and includes products obtained from cow, sheep, and goat's milk. The cheese is made with sheep and cow's milk, has a raw and semi-cooked texture, and sometimes it is flavored. The maturing process lasts no more than 30 days, with rounds from 0.7 to 1.6 Kg. It has a straw yellow color and a sweet taste, which becomes sometimes spicy in the mature semi-cooked cheese.
