Goat's Milk Cheese

The dairy production plays an important role in Veio Park and includes products obtained from cow, sheep, and goat's milk. Fat soft or hard cheese, according to the production typology, "semi-cooked" or mature. It has a cylindrical shape, and the color of the texture goes from ivory to straw yellow for mixed cheese. The rounds can weigh from 200 g to 1.5 kg. It has a delicate taste, which becomes intense and pungent in mature cheese. In some cases it can be flavored with spices. Goat's milk cheese is sold both green and mature, with a maturing process going from 20 days to 6 months.
