St Anthony Biscuit is a sweet bread, shaped in a big plait and produced according to very ancient recipes handed down by word of mouth from mother to daughter. According to a manuscript, the tradition dates back to 1588: the celebration was organized by St. Anthony Confraternity, which today has been replaced with "Signore di S. Antonio", appointed every year among the breeders of Acquapendente. The plait is linked to the knot as symbol of faithfulness, alliance, and therefore link to the worshipped Saint. It can be easily recognized thanks to its shape and ingredients: superfine flour, sugar, eggs, anise, milk, extra-virgin olive oil, yeast, liquors, natural flavors (grated lemon). Its average weight is of about 0.5 kg; it has an intense taste, characterized above all by anise. It is good with wine.
