Tozzetti Viterbesi

Trapezoid or rhomb-shaped biscuits based on toasted hazelnuts. They are made with the hazelnuts of the local cultivar "Tonda gentile romana" produced in the Viterbese area which, thanks to their organoleptic properties, enhance the confectionery products. Tozzetti are synonym of solemn feast; in particular, they are produced and eaten during the Christmas period and in winter. The production and diffusion of tozzetti in the Viterbese area may be linked to the considerable presence of hazelnut groves, especially from the second half of the last century, mainly in the area of Cimini Mountains.
