Among local products, the most important one is the so-called "bottarga". Obtained from the mullet's eggs, it represents a real local richness.
It is a very precious dish and is mainly obtained from mullet's eggs (but also tuna and swordfish). The characteristic marshy environment of Sinis peninsula and the traditional fishing activity that has represented for centuries the main source of income for the local inhabitants have favored the preparation of bottarga, born as a dish eaten by fishermen during their days spent in the sea.
