Elba Island is characterized by the cultivation of traditional olive trees producing a top-quality extra-virgin olive oil which has obtained PGI Toscana (Protected Geographical Indication), like Frantoio, Leccino, Moraiolo, Pendolino. The olive groves are situated in the hills facing the sea, surrounded by Mediterranean maquis. The olives are harvested by hand and immediately transported to the local olive press, where the extra-virgin olive oil is obtained from cold pressing: the oil has a golden color and is rich in fragrances, with a low acidity. It is a product obtained in the local agricultural holdings that work in the area of the National Park, bottle and label their small productions and directly sell them, reducing the distance between producer and consumer with the so-called "short distribution chain".
