Scardovari Mussels and Clams

Mussels harvesting has developed since the 1960s in Sacca degli Scardovari, situated between Po di Gnocca and Po di Tolle, a gulf with not very deep salt waters. Since the 1970s, mussel farming activities have started in the area. Here, mussel farming includes the species Mytilus galloprovincialis, particularly tasty: The Ministry of Agriculture has included Scardovari mussels in the list of the Italian traditional products, an important first step for what is called the "gold" of the Po Delta.
The production of clams is also very important in Sacca degli Scardovari and the lagoons of Veneto situated between Po di Maistra and Po di Goro. In the 6,500 hectares of lagoons of Delta Polesine, "la verace" clam is farmed, which distinguishes itself for its size (about 8 centimeters). In the latest years, the Manila clam (Tapes philippinarum Adams&Reeve) has been introduced: this clam has enabled a considerable economic growth, and Italy has become the major Community producing country. Fishing is still carried out by hand, a feature that makes the product particularly lively and resistant to the following depuration operations. The rotation of the fishing areas and the areas of biological rest represents the main feature of a sustainable economy which does not alter the surrounding environment. As appetizers, moules marinière or in sauce, in risotti or spaghetti, the mussels and clams of the Po Delta are some of the specialties you can taste in the local restaurants.
