The eel is a fish of the Anguillidae family, that grows well in freshwater and seawater. It has a very long body, with a round and serpentine section. Its head is small and the mouth is equipped with strong jaws and small sharp teeth; the back and the upper part of its body are black or greenish, while the belly is white or yellowish. It can reach a maximum length of 120-130 cm and weigh up to 2.5 kg; the large female is called large eel (capitone). It is the only farmed fish whose controlled reproduction is not yet possible: for this reason, the cycle starts with wild eels of 5-50 g caught in the natural environment. Italy is the first producer of farmed eels in Europe. Many production sites are located in the valleys of the Po Veneto Delta.

The seasonality of this fish is from January to March and from October to December.
