Black Truffle

It is commonly called "Tartufo Nero di Norcia e Spoleto" (Norcia and Spoleto Black Truffle). Tuber melanosporum Vittadini can be recognized from other varieties (such as Tuber brumale Vittadini or winter black truffle and Tuber aestivum Vittadini, or summer black truffle) thanks to its dark and rough rind and to its black-violaceous pulp with white veins. Its size can vary, from the size of a hazelnut to the size of an orange. It has a pleasant and delicate fragrance. It can be found near oaks, hornbeams, hazelnut trees, holm oaks between 1st December and 15th March. The main market is Norcia, while Montemonaco is famous for truffles on the slope of Ascoli. In the Park woodlands it is also possible to find the White Truffle (rare and precious, it is picked up between October and December) and the summer Scorzone (ripening between June and August).
