Olive oil

Most of the Karst's olive trees belong to the variety called "Bianchera", and they originate a particularly fine olive oil. The olives processing is very important, since it is completely handmade. The olive trees are mainly cultivated by small family-run farms, and olive are manually picked. The picked olives are brought to the olive oil mill as soon as possible, where they are subject to cold pressing. The olive oil obtained through cold pressing has one-of-a-kind properties: a very low acidity, a marked and typical taste, a herbaceous and genuine flavor.
