Seravezza Schiacciata

Features: focaccia mainly cooked in wood-burning oven. It has a fine perfume of spices and rosemary. Characterized by a round shape, it is prepared in two sizes, about 250 grams and 350 grams. The color of the crust is golden brown. The width is about 3 cm.

Ingredients: corn flour and common wheat flour in equal parts, lard, garlic, rosemary, basil, yeast, and extra-virgin olive oil.
Focacce are put into the oven after baking bread, using the remaining heat.

Seravezza Schiacciata is also served as appetizer, together with a fine glass of wine from Monti di Ripa, full-bodied and perfumed. To prepare it, the lard produced in the area of Apuane is used.
Seravezza Schiacciata has ancient origins: it was a homemade product prepared for miners by the women of the towns in Alpi Apuane, since it was an energy-giving product easy to preserve.

Seravezza Schiacciata is produced every day and is also sold in some grocery stores of Versilia, Massa, and Carrara.
