Quarantino Corn of Oglio Valley

Land preparation and ploughing
It is carried out in late spring, after a stage of natural manuring.

Sowing
It is carried out in late May.

Cultivation
Corn has been cultivated exclusively by farmers of Oglio Nord Park in the agricultural holding Giupponi Silvio e figli ss - Cascina Belprato - Orzinuovi (BS). The professional agricultural entrepreneurs have enabled the production and harvesting of top-quality corn (without the need to use parasiticidal measures).

The varieties of corn
A corn variety with vitreous fracture is used (usually, the cultivated corn has a floury fracture). During tasting activities and comparison tests, it has been considered as equal or even better of the old traditional local varieties. Only after drying, winnowing for the elimination of malformed grains of other impurities, it is brought to the mill for the milling.

Milling
Stone-milling is practiced by La Grande Ruota s.r.l. Dello (BS).
Here, the considerable experience in milling handed down from father to son, together with a strong passion for the products of the ancient cooking tradition, involves everyone in creating variations meeting also the needs of the modern society. The flour for polenta is packaged after milling, without further transformations.
