Thanks to its clear kernel that does not leave oily traces, it is very used in dessert decoration. The thin nutshell makes it easy to break, revealing a rich heart with the intense taste of the mountains. In the soft fields of Bleggio, walnut growing boasts an ancient presence documented already in the 16th century. After a period of abandonment, its production has been recovered and aims now at the enhancement of its genuineness. A rural and nutritious fruit, it has preserved its features thanks to the exploitation of the spontaneous growth of the walnut tree and the careful processing of its fruits, which avoids the use of machines and chemical products.
The walnut is the main ingredient of Zelten, a very widespread dessert in Trentino.
