Most of the area of Lucretili Mountains is characterized by the olive tree cultivation, and belongs to the production area of Sabina PDO. The calcareous and clayey soil, the temperate climate, the hilly altitude with ideal slopes are features that, combined with the careful cultivation, harvesting, and processing methods, have transformed the area of Sabina in one of the most important areas in Italy for the oil production. As a matter of fact, Sabina PDO has been recognized in Italy in 1995. As usual where the conditions are ideal for the olive tree, the soil is also ideal for viticulture. A part of Lucretili area is characterized by wine growing: the most widespread cultivars are Trebbiano toscano, Malvasia del Lazio, Malvasia di Candia, Sangiovese, and Montepulciano. There is also Colli della Sabina DOC label, white and red, obtained in 1996. The piedmont area, in particular the Municipalities of Palombara Sabina, Marcellina, San Polo dei Cavalieri, and Montorio Romano, is characterized by the extensive fruit production, especially cherries (early cultivars like Bigarreau Moreau, harvested in May, and the traditional cultivar Ravenna, harvested in June). Harvesting is carried out in various stages, when the fruits have the characteristic coloring and the pulp is still compact.

Ravenna Cherry of Sabina
Ravenna Cherry of Sabina derives from the local cultivars early Ravenna and late Ravenna. It has a round shape, caliber 15 to 20mm, pulp with a pink color tending to winy. The taste is excellent, sweet, persistent, and the structure is coarse.
