Many specialties we can still taste and appreciate were born in this way: among them, cheese, wine, and cold cuts. The food preservation practice based not only on salt - which played in the past an essential role in the economy of large areas - but also on animal and vegetable fats has very ancient origins. In the current area of the National Park, recipes based on lard or oil have developed over the years according to the agricultural or sheep breeding vocation of the area of origin.
