Fresh sausages obtained with second-choice pork cuts (shoulder lean
meat and soft bacon and ham trimming fat), much thinner than those
used for the production of cotechini to cook. The meat gets minced,
salted, flavored, packed into bowels, and prepared in strings. They are
eaten after cooking and are one of the essential ingredients of risotto alla pilota.
They have a cylindrical shape, slightly curved, a length going from 15 to 20 cm, a weight of about 200 gr, soft
consistency, sweet and delicate taste.
