Spelt

Organic product - it does not need plant protection products - from which flour is obtained, in whole or crushed grains. It is ideal to prepare soups or to eat with pork rinds, potatoes or mushrooms, alone or together with other cereals. The flour is used to make an excellent polenta or biscuits (the so-called farretti).
Spelt is particularly rich in antioxidants, including selenium, capable of fighting cellular aging.

Recommended recipe

Spelt polenta with truffle
200 g spelt flour
1 black truffle
extra-virgin olive oil
50 g butter
broth or soup

Cook the spelt flour in 1 liter broth for 45 minutes.
Before serving, add the butter and make it melt. Pour into a dish and spread with grated truffle.
