The plateau area is characterized by ideal conditions for the development of some cultivations and the organic farming practice. Such conditions are represented above all the richness in water, the soil composition, its fertility and altitude. A cause of pride of this territory is Colfiorito "red potato". Another important product is the lentil, of the same species of Castelluccio di Norcia lentil, with the same features and quality.
Moreover, spelt, beans, chick-peas, and chickling are all traditional products of the plateaus and, above all, products appreciated for their unquestioned quality. The cuisine which is based on them consists of simple, genuine, and tasty dishes.
The richness in high-mountain pastures and fodder is the ideal condition for the production of large quantities of milk which is transformed into cheese both by local producers and big local cheese factories. Another characteristic aspect is represented by lambs and sheep grazing in the plateaus: besides the fine milk they produce, and therefore the excellent cheese, their meat is rich in the taste of the high-mountain pasture grass.
