Verona plain is delimited in the north by Lessini Mountains, a very ancient cheese-making area whose origins date back to the first 13th century Cimbrian settlements. Monte Veronese, which obtained the PDO in 1992, is a semi-cooked texture cheese produced with whole cow's milk (fresh cheese) or with partially skimmed milk (mature cheese). The former is a table cheese with white texture, sweet, ready to be eaten after three months; the latter, called "d'allevo", matures for six months, has more marked holes and a more adequate consistency to flakes, more intense taste, almost spicy. Its name derives from the dialect term "monta" (meaning "milking") and not from "monte" (meaning "mountain"). However, afterwards, the second interpretation was accepted. The term "veronese" was added in order to better distinguish it from other products.
